I n the future, the refrigeration needs of foodservice operators,
say some experts, may be significantly altered. The irresistible
appeal of farm-to-fork will cause restaurants to eschew long-
term cold storage, relying instead on daily food deliveries buzzed
in by drone – rather than by gas-guzzling trucks – or simply
passed over the fence from the neighboring kitchen garden/farm.
It's a plausible scenario– if only in a somewhat rarified part of the
industry – and certainly commercial refrigeration machines may
become more compact
