If you want to learn more about a culture, start by learning more about what they eat.
I experienced this at an early age being raised in a big Italian family. Every dinner helped me connect with my heritage. Meals
became a chance to cherish the ingredients and traditions that my Italian grandparents were also raised on.
I’ve also adopted this philosophy when I travel, especially internationally. I love taking cooking classes abroad to learn about
local traditions and ingredients and meet other chefs. Some of my best memories are cooking green curry in Thailand, taking
paella classes in Spain, and learning to prepare Num Kruk in Cambodia. No matter where you are in the world, every plate
has a story of the people, culture, and land. Taking a bite is listening to a whole society’s worth of experiences.
